One such example is Vosges Haut-Chocolat, and this Valentine’s Day we’re partnering with the brand for a truffle tasting in our boutiques. Shoppers will be treated to exclusive chocolates designed to complement some of our most classic fragrances. “I wanted to smell each perfume to see which ingredients stood out,” explains Chocolatier and Vosges Founder Katrina Markoff, who crafted the sweets. “My focus was to go beyond creating an edible version of what you’re smelling. I wanted the spices to complement the perfumes for a perfect sensory bite.” The truffles are full of unexpected flavors like hickory-smoked salt and chamomile, and her approach is a little like blending fragrance. “When creating interesting pairings, I look for contrasting tastes (acidity with sweetness, salty with sour) and also focus on the aromatics,” she says. “I love working with spices, flowers, and herbs. I choose aromatics with top and low notes that complement the base note of the chocolate.”
